Ham and Broccoli Roll-Ups

A delicious breakfast option

I am not a breakfast person.  Breakfast is a meal I could skip and be perfectly fine with it.  I know, I know...Breakfast is the most important meal of the day... my mom told me this often as a child.  

Are you someone who doesn't like breakfast?  Well, here is a recipe for a great breakfast meal.  Simply switch out some of the ingredients and you can make these any way you wish!

Ham and Broccoli Roll-Ups

Ingredients:

  • 1 puff pastry sheet
  • 1 egg
  • 1 tablespoon water
  • Dash of garlic powder, onion powder, salt, and pepper
  • 4 ounces whipped cream cheese or half a brick of cream cheese softened
  • 1/2 tablespoon dried dill or chives
  • 1 cup fresh broccoli (or frozen broccoli thawed & drained)
  • 1 cup sliced ham chopped (lunch meat or leftover ham pieces)


Directions:

  1. Preheat the oven to 400 degrees. Beat the egg and water in a small bowl until mixed well.  Sprinkle a dash of garlic powder, onion powder, and salt/pepper in with the egg. 
  2. Unroll pastry sheet onto a floured service.  Sprinkle top with a little flour and roll pastry a few times with a rolling pin.  
  3. Mix the dill or chives into the whipped cream cheese.  If using half a brick of cream cheese, beat with an electric mixer till smooth and whipped.  Add dill or chives and mix well. 
  4. Spread cream cheese mixture onto the surface of the pastry sheet to about 1/4 inch to 1/2 inch of the edge. 
  5. In a food processor, chop the broccoli and ham into small, fine pieces.  Sprinkle onto the top of the cream cheese. 
  6. Starting at one long end, roll the pastry up like a jelly roll.  Be sure to keep the roll tight (your fingers will get messy).  Roll completely to the other end.  
  7. Use the egg mixture to seal the end of the roll.  
  8. Cut into 20 slices (giver or take).  Place cut side down on a foil-lined cookie sheet.  Brush the tops of the cut pieces with the egg mixture. 
  9. Place in the preheated oven and bake for 15-18 minutes (you may need to add more time) or until golden brown.  
  10. Remove from oven and place on a cooling rack. 







Tips

* Want to make ahead?  You can freeze the precooked rollups!  They thaw nicely and taste just as delicious!

* Is there a vegetarian in the family?  Swap out the ham for mushrooms or other veggies like cauliflower, peppers, or onions.
