I love oatmeal raisin cookies! But I like to mix it up a bit -- remove the raisins and enter craisins! If you're like me and like an oatmeal raisin cookie, then you will love this alternative. Yummy!
Ingredients
- 1½ cup(s) all-purpose flour
- 1 teaspoon(s) baking soda
- ¼ teaspoon(s) nutmeg
- ½ teaspoon(s) salt (optional)
- ½ cup(s) plus 6 tablespoons butter, softened
- ¾ cup(s) firmly packed light brown sugar
- ½ cup(s) granulated sugar
- 2 eggs (whisked)
- 1 teaspoon(s) vanilla
- 3 cup(s) quick or old fashioned, uncooked oats (I used my food processer to chop my old fashioned oats up more)
- 1½ cup(s) Craisins
Directions:
Heat your oven to 350 degrees Fahrenheit.
In a medium bowl, combine flour, baking soda, nutmeg, and salt; set aside.
In a large bowl, beat butter, brown sugar, and granulated sugar on medium speed of electric mixer or in a stand mixer until creamy.
Add your beaten eggs and vanilla; mix well.
Gradually add in flour mixture.
Stir in oats and craisins.
Make sure all ingredients are mixed well.
Use a cookie scoop or tablespoon to drop dough onto ungreased cookie sheets.**
Bake 8-10 minutes or until light and golden brown.
Cool 1 minute on cookie sheets; remove to a wire rack to cool completely.
